These roasters were set or suspended in front of a range or fire to concentrate heat on the joint hanging in the cylindrical reflector. The clockwork bottle jack turns the joint backwards and forwards. The dripping falls into the tray and a basting spoon is inserted through the small door to scoop it up and baste the joint of meat.
